After making weight on Saturday at the Charlotte Open, I was looking forward to a big ole plate of nachos. I deep fry corn tortillas that I cut into wedges. Nachos are absolutely my favorite food. I switch chicken for beef sometimes. And when I have leftover steak, that always makes a nice topping.

Chips and Cheese

  • Tortilla Chips

  • White Soft Cheese

  • Cheddar Cheese

  • White Crumbles

Toppings

  • Black Beans with spices (cumin, chili powder, garlic, onion, and smoked paprika)

  • Corn (I cut this off a cob)

  • Ground beef with spices (cumin, smoked chili powder, celery salt), fat drained

  • Chopped red onion

  • Chopped lettuce

  • Avocado

  • Sour Cream

Homemade Salsa

  • Tomatoes (can of diced tomatoes or a fresh tomato)

  • Hot peppers

  • Onion

  • Garlic

  • Parsley

  • Cilantro

Throw all the ingredients for the salsa into a food processor and mix until you get the texture you like. I like mine chunky so I don’t blend too long. Add spices to get the taste you desire.
