Right now I am eating a lot of protein. I typically eat more than the average person, but preparing for IBJJF World’s brings on a new intensity of ensuring adequate protein consumption. Tonight the local grocery store had some lean ground turkey on sale due to expiration date, so I bought it knowing I had to cook it tonight. While at the stove, I decided to go ahead and make a salt brine for the whole chicken. When you eat as much chicken as I do, the brine makes a huge difference in moisture and flavor.
