Ingredients

  • Low Carb Tortilla

  • Red, green, and yellow peppers (frozen works as well)

  • Eggs

  • Sausage

  • Salsa (I use my homemade salsa)

  • Sour Cream (optional)

  • Cheese (optional)

Directions

  • Scramble the eggs in some butter
  • Cook the sausage and drain the grease
  • Saute’ the peppers in butter
  • Put all ingredients into a tortilla and fold. If adding cheese, put inside the tortilla with the other ingredients. Cook each side until crispy.
  • Add salsa and sour cream if desired
