After making weight on Saturday at the Charlotte Open, I was looking forward to a big ole plate of nachos. I deep fry corn tortillas that I cut into wedges. Nachos are absolutely my favorite food. I switch chicken for beef sometimes. And when I have leftover steak, that always makes a nice topping.
Toppings
Black Beans with spices (cumin, chili powder, garlic, onion, and smoked paprika)
Corn (I cut this off a cob)
Ground beef with spices (cumin, smoked chili powder, celery salt), fat drained
Chopped red onion
Chopped lettuce
Avocado
Sour Cream
Homemade Salsa
Tomatoes (can of diced tomatoes or a fresh tomato)
Hot peppers
Onion
Garlic
Parsley
Cilantro
Throw all the ingredients for the salsa into a food processor and mix until you get the texture you like. I like mine chunky so I don’t blend too long. Add spices to get the taste you desire.
