I made this high protein meal for lunches next week. I stuffed chicken with spinach and parmesan with cottage cheese as the base. I cooked brussel sprouts and broccoli with it for my vegetables.
Ingredients for Stuffing
1/2 cup cottage cheese
1/4 block of parmesan cheese
1 cup or more of spinach
3 – 4 splashes of balsamic vinegar
pinch of salt
- Directions for Chicken
- Beat the chicken breast until flat
Directions
- Preheat oven to 350 (Viking) or 400 (regular stove)
- Mix all the stuffing ingredients in a food processor
- Cut the chicken into strips and put a scoop of the filling on the end of the strip. Roll up the strip.
- Place in pan with veges you want to roast. I sprinkled some olive oil, salt, and pepper over everything. Cook for about 40 minutes.
