I made this high protein meal for lunches next week. I stuffed chicken with spinach and parmesan with cottage cheese as the base. I cooked brussel sprouts and broccoli with it for my vegetables.

Ingredients for Stuffing

  • 1/2 cup cottage cheese

  • 1/4 block of parmesan cheese

  • 1 cup or more of spinach

  • 3 – 4 splashes of balsamic vinegar

  • pinch of salt

  • Directions for Chicken
  • Beat the chicken breast until flat

Directions

  • Preheat oven to 350 (Viking) or 400 (regular stove)
  • Mix all the stuffing ingredients in a food processor
  • Cut the chicken into strips and put a scoop of the filling on the end of the strip. Roll up the strip.
  • Place in pan with veges you want to roast. I sprinkled some olive oil, salt, and pepper over everything. Cook for about 40 minutes.
