I bought a 50 lb bag of these beautiful Russets. I have made homemade french fries, potato chips, shredded potatoes for hash browns, potato buns, and mashed potatoes. If you soak the french fries, potato chips, and shredded potatoes in water, you can remove a lot of the starch. Then I bag the different versions and freeze meal size portions until needed. After about 2 weeks, I finally got all the potatoes bagged up before any went bad.
