Pork Tenderloin in Homemade BBQ sauce

BBQ sauce is one of the easiest sauces to make. Tomato sauce and paste, mustard, vinegar, and some molasses are the base. Then use all the different spices to your taste. I like cumin, dark chili powder, salt and pepper. And with just about everything, I use garlic and onion powder.

Cornbread

Directions

  • Preheat oven to 350 (Viking) or 400 (regular stove)
  • Combine the following ingredients:
    4 tbsp lard, butter, or bacon grease
    2 cups corn meal
    1 tsp baking powder
    1 tsp baking soda
    2 eggs
    1 1/2 buttermilk
    some salt ( I don’t use much)
  • Spray a cast iron pan (or a regular pan) with some non-stick oil and add the mixed ingredients.
  • Bake for 20-25 minutes and top with some butter.

Pinto Beans

Either soak dry pinto beans overnight,

Or, pressure cook dry pinto beans,

Or open a can of pinto beans and rinse the beans of the liquid in the can.

Season with seasonings such as cumin, garlic powder, onion powder, salt, and pepper. I also use some smoked paprika.

Add fat back if you have it. I had fat back from the homemade sausage and bacon I made.

Add some broth to give it liquid and slow cook while the pork tenderloin is cooking. Keep adding broth and seasonings as necessary.
